7 Techniques to Instantly Upgrade Your Vegetables
Seven chef-tested methods for turning everyday vegetables into side dishes worth eating — glazed carrots, deeply browned brussels, slow-roasted beets, garlicky braised kale, blistered wok-fried green beans, buttery sautéed mushrooms, and broiled asparagus. Each technique transfers to a whole family of other vegetables.
Ingredients
Glazed Carrots
- 1 lbcarrots · 450 g; cut to 1" obliques
- 250 gchicken stock · 1 cup
- 55 ghoney · 2 tablespoons

- 1/2lemon · zest of half, plus 10 g (2 t) juice

Pan-Roasted Brussels
- 675 gbrussels sprouts · 1 1/2 lb; halved
- —olive oil · 3-4 tablespoons for roasting, plus more to finish
- —salt
- 3 Tcapers · dried, fried in oil
- 15 glemon juice · 1 tablespoon
- 10 gparmesan · 2 tablespoons, grated

Slow-Roasted Beets
- 450 gbeets · 1 lb; whole

Beet Marinade

Braised Kale / Broccoli Raab
- 450 gkale · 1 lb; destemmed and chopped
- 45 golive oil · 3 tablespoons, plus more

- 15 ggarlic · 5-6 cloves, sliced
- 120 gchicken stock · 1/2 cup
Wok-Fried Green Beans
- 450 ggreen beans · 1 lb; cut into 1" pieces
- 20 gneutral oil · 1 1/2 tablespoons
- 4 gsalt · 3/4 teaspoon
- 5 ggarlic · 1 teaspoon
- 5 gginger · 1 teaspoon, grated
- —chicken stock or water · a splash, to deglaze
Sautéed Mushrooms
- 225 gcremini mushrooms · 1/2 lb; 1/2" slices
- 225 goyster mushrooms · 1/2 lb; 1" chunks
- 45 golive oil · 3 tablespoons, plus more as needed
- 5 gsalt · 1 teaspoon
- 75 gshallot · 1/2 cup, chopped
- 15 ggarlic · 1 tablespoon, minced
- —water · a splash, to deglaze

- 30 gbutter · 2 tablespoons
- 10 gaged balsamic · 2 teaspoons
Broiled Asparagus
- 450 gthick asparagus spears · 1 lb; bottoms trimmed off
- 15 golive oil · 1 tablespoon
- 5 gsalt · 1 teaspoon, plus more to finish
- —black pepper
- 25 gunsalted butter · 2 tablespoons
- 5garlic cloves · minced
- 1/2lemon · juice

Glazed carrots: Combine the carrots, chicken stock, honey, and salt in a pan over medium-high heat. Bring to a simmer, then cover with a parchment cartouche lid and cook 7-8 minutes, until tender but still firm.

Add the thyme, lemon zest, lemon juice, and butter, then swirl the pan until the glaze is glossy and satiny. Finish with a pinch of black pepper.

Pan-roasted brussels: Heat a large stainless pan over high heat. Add 3-4 tablespoons olive oil, the halved brussels, a large pinch of salt, and more oil over the top. Roast 6-7 minutes, tossing occasionally, until deeply browned.

Tent the pan with foil, reduce the heat to medium-low, and steam 2 minutes.

Off the heat, toss the brussels with the lemon juice, parmesan, a pinch of chile flake, more olive oil, the fried capers, and black pepper.

Slow-roasted beets: Toss the whole beets with olive oil and salt, wrap tightly in a double layer of foil, and roast at 300F/150C for 60-75 minutes, until tender with slight resistance.

Cool the beets 15 minutes, then peel them using paper towels and cut into bite-size pieces.

Whisk the marinade — olive oil, white balsamic, honey, salt, and black pepper — and gently toss the warm beets in it.

Braised kale: Heat a dutch oven until hot, then add the olive oil, kale, and salt. Stir and cook 2 minutes, until wilted.

Add more oil and the sliced garlic; stir and cook 1 minute.

Add the chicken stock, cover, and braise over medium heat for 10 minutes. Taste for salt.

Wok-fried green beans: Heat a wok over high heat, add the neutral oil, green beans, and salt, and stir fry 1 minute, until blistered.

Add the garlic and ginger and stir fry 1 minute more.

Add a splash of stock or water to deglaze and coat the beans. Serve immediately.

Sautéed mushrooms: Heat a large sauté pan over medium-high, add the olive oil, mushrooms, and salt, and cook 7-8 minutes, stirring often, until browned.

Add the shallot and garlic and cook 1 minute.

Add a splash of water to deglaze, then add the thyme and butter and sauté 2 more minutes. Finish with the aged balsamic and taste for seasoning.

Broiled asparagus: Lay the spears on a sheet tray, add the olive oil, season with salt and pepper, and roll the spears to coat.

Broil 3-4 inches from the heat source for 4 minutes, turning halfway.

Meanwhile, melt the butter with the minced garlic in a nonstick pan over low heat for 1 minute.

Pour the garlic butter over the hot asparagus and toss to coat. Finish with the juice of half a lemon and more salt and pepper.
Creator's notes
Each technique transfers to other vegetables: glazing also works for turnips, rutabaga, parsnip, onion, radish, snap peas, and kohlrabi. Pan-roasting is great for cauliflower — or oven-roast instead by spraying a sheet pan with oil, adding the cauliflower, spraying it with oil, seasoning with salt, and roasting at 450F/230C for 15 minutes. Slow roasting suits celery root, carrots, parsnip, and fennel. Braising works for collard greens, chard, broccoli rabe, and other hearty greens. Wok frying is also good for snow peas. Broiling works well for broccolini and green beans.
