Budget Roasted Chicken Quarters with Potatoes and Carrots
Bone-in chicken quarters roast over baby potatoes and carrots until the skin crisps and the vegetables soak up every drop of drippings. The pan goes straight to the stovetop for a quick flour-and-broth gravy that ties the whole plate together.
Ingredients
- 4chicken quarters · bone-in, skin-on; from a 10 lb bag, freeze the rest
- 1 bagbaby potatoes · or chunked Yukon gold potatoes to save money
- —baby carrots
- —avocado oil · for the vegetables and to drizzle over the chicken
- —all-purpose seasoning · Kinder's Creamy Steakhouse or whatever blend you have on hand
- —all-purpose flour · for the gravy
- —chicken broth · for the gravy
- 1 bagfrozen green beans · optional, microwaved as a side
Steps

Heat the oven to 425°F.

Spread the carrots and baby potatoes in the bottom of a stovetop-safe roasting pan, drizzle with avocado oil, and toss with the all-purpose seasoning.

Set the chicken quarters on top of the vegetables, drizzle with avocado oil, and coat them with the same all-purpose seasoning. Wash your hands after handling raw chicken.

Cover the pan and roast at 425°F.

Uncover and check the chicken, then return it to the oven uncovered for another 15 to 20 minutes, until the chicken is cooked through. Broil briefly at the end if you want a crispier top.

Move the chicken to a serving platter and the vegetables to a bowl, leaving the drippings in the pan.

Set the pan on the stovetop, scrape up the browned bits, and whisk flour into the drippings.

Add chicken broth and simmer until the gravy thickens, then serve with the chicken and vegetables.

Microwave a bag of frozen green beans on the side if you want something green on the plate.
Creator's notes
Chicken quarters are the cheapest meat around — these were 96 cents a pound. Swap the baby potatoes for chunked-up Yukon golds to make it even cheaper, and shop your fridge, freezer and pantry first so nothing goes to waste.
