Cajun Gumbo

A deeply savory Cajun gumbo built on a slow-cooked dark chocolate roux, browned chicken thighs, and seared andouille. Trinity-style vegetables, okra, and a gelatin-fortified chicken stock give it body and a rich, spicy finish.

  • 900 gchicken thigh, boneless skinless · 2 lb
  • salt
  • water · to deglaze
  • 380 gandouille sausage, sliced and quartered · 13.5 oz
  • 225 gneutral oil · 1 cup; peanut, avocado, or canola
  • 225 gAP flour · 1 7/8 cups
  • 400 gonion, medium diced · about 3 cups
  • 250 gcelery, medium diced · about 1 3/4 cups
  • 250 gpoblano, medium diced · about 1 3/4 cups
  • 200 gokra, sliced 1/4–1/2 inch thick · about 1 3/4 cups
  • 25 ggarlic, minced · about 2 tbsp
  • 1500 gchicken stock · 6 1/4 cups
  • 35 gBetter Than Bouillon chicken base · about 2 tbsp
  • 3 packetsgelatin
  • 10 gLouisiana brand hot sauce · 2 tsp; or Crystal
  • 10 gpaprika · about 1 1/2 tbsp

Full detailed recipe at https://www.brianlagerstrom.com/recipes/cajun-gumbo. The roux takes 30–45 minutes of frequent whisking — cook it to the color of melted milk chocolate. The stock is "fortified" with bouillon and gelatin for extra body; homemade stock can be used instead.
