Cheesy Taco Noodles (Taco Hamburger Helper from Scratch)
A one-pot skillet of seasoned ground beef, beans, corn, and egg noodles simmered in taco sauce and finished with melty pepper Jack. Pure pantry-raid comfort food that comes together in a single pot.
Ingredients
- 1 packageground beef
- —garlic · creator uses "a metric ton," not measured
- —dehydrated minced onion · not measured
- —taco seasoning · creator used whatever was left in the container
- —mild taco simmer sauce
- 1 bagpinto beans or black beans · whatever you have on hand
- 1 bagfrozen corn
- 1/2 jargreen salsa
- —beef broth · creator used a partial box
- 1 heaping tablespoontomato paste
- 1/2 bagegg noodles · creator ended up adding the whole bag
- 1 cupwater · added because the whole bag of noodles went in
- —sliced pepper Jack cheese · shredded cheese works too
Steps

Brown the ground beef in a large pot, breaking it up aggressively as it cooks, until it is brown and not gray. Wash your hands after handling the raw meat and its packaging.

Add the garlic, dehydrated minced onion, and taco seasoning. (You can add the seasonings now or wait until the beef is browned.)

Stir in the mild taco simmer sauce, beans, frozen corn, and green salsa.

Add the beef broth and tomato paste and stir to combine.

Stir in the egg noodles along with the cup of water.

Cover the pot and let it simmer, stirring about halfway through so nothing sticks to the bottom and all the noodles get down into the liquid.

Simmer until most of the liquid is absorbed.

Lay slices of pepper Jack cheese over the top and let them melt, then serve.
Creator's notes
Made entirely from pantry staples during a snowstorm — swap in whatever beans, cheese, or salsa you already have. Sliced cheese melts just as well as shredded.
