Fully Loaded Italian Deli Pasta Salad With Homemade Dressing
Soft rotini is seasoned with vinegar while hot, then folded with salami, Kalamata olives, sun-dried tomatoes, mozzarella, and coarse Parmesan. A creamy blended Italian dressing tastes like the one from a classic Italian-American restaurant.
Ingredients
Pasta Salad
- 2000 gwater · about 2 qt
- 45 gfine salt · for the pasta water
- 235 grotini · or fusilli; 225-235 g
- 25 gwhite distilled vinegar · for seasoning the hot pasta
- 1-2 tspolive oil · for tossing the pasta
- 100 gpitted Kalamata olives · cut into thirds; Castelvetrano for a milder option
- 60-75 gred bell pepper · small diced (about half a pepper)
- 50-75 gpepperoncini · small diced; use more for extra heat
- 110 gthin-sliced Genoa salami · diced into 1-inch squares and fluffed apart; pepperoni or capicola also work
- 150 gItalian dressing · homemade (below), plus more as needed
- 100-150 gfresh mozzarella · firm cow's-milk ball, diced into 1/4-inch cubes; not buffalo mozzarella
- 100 goil-packed sun-dried tomatoes · blotted and chopped into 1/2-inch pieces
- 75 gaged Parmesan · coarsely grated, plus more for serving
Dressing
- 20 gred onion · chopped and rinsed
- 1 clovegarlic · about 5 g
- 15 gred bell pepper · chopped
- 25 ggrainy mustard
- 25 gred wine vinegar
- 45 gwhite distilled vinegar
- 1/4 tspdried oregano
- 1/4 tspdried basil
- 1/4 tspred chile flake
- 1/4 tspground black pepper
- 15 gsugar
- 5 gsalt
- 200 gneutral oil · about 1 cup; canola, avocado, or peanut (not olive oil)

Pour 2000 g (about 2 qt) of water into a medium saucepan and bring it to a rolling boil.

Make the dressing: in a tall, narrow container, combine the rinsed red onion, garlic, 15 g red bell pepper, grainy mustard, red wine vinegar, 45 g white distilled vinegar, oregano, basil, chile flake, black pepper, sugar, and salt. Blend with an immersion blender until everything is completely broken down.

With the immersion blender running, slowly stream in the neutral oil, moving the blender up and down as the dressing thickens. Blend for about a minute, until it's opaque and fully emulsified.

Add 45 g salt to the boiling water, then add the rotini and stir. Bring it back to a rapid boil and cook 11 to 12 minutes, about 25% longer than the package says, until the pasta is fully tender and well past al dente.

Drain the pasta but don't rinse it. Move it to a bowl and, while it's still hot, gently fold in 25 g white distilled vinegar and 1-2 tsp olive oil. Let it cool to about room temperature.

While the pasta cools, prep the mix-ins: cut the olives into thirds, small-dice the bell pepper, chop the pepperoncini, dice the salami and fluff the pieces apart, cut the mozzarella into 1/4-inch cubes, and chop the sun-dried tomatoes into 1/2-inch pieces.

Add the mix-ins, the grated Parmesan, and about half the dressing (roughly 150 g) to the cooled pasta. Fold gently with a spatula until evenly combined, taking care not to tear the tender pasta.

Taste and add more dressing if needed. Serve right away, or chill and serve topped with extra dressing and grated Parmesan.
Creator's notes
Cook the pasta on purpose past al dente: the starch firms up once it's chilled, so soft pasta ends up with the right texture cold. Seasoning the hot pasta with vinegar works like seasoning sushi rice; it isn't meant to make it sour. Don't use olive oil in the dressing. Blending makes it bitter, and it solidifies in the fridge and then breaks. With a regular blender, make a double batch so the blades can catch everything. To make it by hand, chop the onion, garlic, and pepper into a fine paste, then whisk in the rest. The dressing keeps about 2 months refrigerated, and the salad keeps 3-4 days. The recipe makes extra dressing because the pasta soaks it up as it sits. Use thin-sliced salami and firm cow's-milk mozzarella; buffalo mozzarella is too soft and tears apart. Dry-packed sun-dried tomatoes can be soaked in hot water for about 3 hours, drained, and packed in oil. Coarsely grated 18-month aged Parmesan stays distinct instead of turning pasty.
