Garlicky Steak Bites
Seared sirloin steak bites with a crust from a screaming-hot cast iron skillet, tossed in a rich fresh-garlic butter sauce. Finished with parsley and best eaten straight from the pan.
Ingredients
- —olive oil · for the skillet
- —sirloin steak, cut into bite-sized pieces
- —salt
- —pepper
- 1 stickbutter · doubled from the cookbook amount for a double batch of steak
- —garlic · a lot, freshly chopped
- —fresh parsley · for topping
Steps

Heat a cast iron skillet with some olive oil until the oil and pan are screaming hot.

While the pan heats, season the sirloin steak bites generously with salt and pepper, tossing until well coated — add more if needed.

Add the steak bites to the hot pan and spread them into an even layer so nothing overlaps and everything can form a crust.

Sear about 3 to 4 minutes per side, until crusted and nearly cooked through.

Pull the steak out of the pan and set aside.

Add the butter and chopped garlic to the pan and sauté until the garlic is cooked through and no longer raw.

Return the steak to the pan and toss to coat in the garlic butter sauce, allowing the steak to finish cooking.

Top with fresh parsley and serve straight from the pan.
Creator's notes
Jessica is cooking from her own cookbook, Of Course It's Good, and doubles the recipe — twice the steak means twice the butter and garlic. She prefers chopping fresh garlic for steak and sautés it because she isn't a fan of raw garlic.
