Ground Beef Bowl with Turmeric Rice, Dill Sauce & Pickled Onions
A fast, protein-packed bowl of smashed seasoned ground beef over golden bouillon-turmeric rice, finished with a creamy dill sauce, quick pickled red onions, and crunchy cilantro stems. Comes together in about half an hour and makes enough sauce and pickles to carry into other meals all week.
Ingredients
Pickled onions
- 1/2red onion · sliced
- —distilled white vinegar
- —water
- —salt · a sprinkle
Turmeric rice
- 180 gwhite rice · 4 servings
- 250 gwater
- 5 gchicken bouillon powder
- 1 gturmeric · for color
- 1 gdried oregano
- 1 clovegarlic · crushed
Dill sauce
- 150 glow-fat sour cream
- 50 gmayonnaise
- 4 gdried dill
- —distilled white vinegar · a splash
- 50 gwater
Beef and assembly
- 1/2 lb93/7 ground beef

- —Aleppo pepper · for heat
- —dried minced garlic
- —cilantro stems · chopped

Make the pickled onions: slice half a red onion and pack it into a jar. Bring vinegar, water, and a sprinkle of salt to a boil, then pour the hot brine over the onions and let them cool.

Make the rice: add 180 g white rice to a rice cooker with 250 g water, 5 g chicken bouillon powder, about 1 g turmeric, 1 g dried oregano, and one crushed garlic clove. Stir to combine, cover, and cook until done.

Make the dill sauce: in a jar, mix 150 g low-fat sour cream, 50 g mayonnaise, about 4 g dried dill, a splash of vinegar, and about 50 g water until smooth and pourable.

Cook the beef: heat a griddle or skillet until ripping hot, add the half pound of ground beef, and smash it down flat to maximize browning.

Once the beef has good color, season with salt, Aleppo pepper, and dried minced garlic, then break it up into small pieces with a spatula and cook through, about 4 minutes total.

Chop the cilantro stems for crunch.

Assemble: add half the cooked rice to a bowl, top with all of the beef, drizzle over 15 to 20 g of the dill sauce, add pickled onions, and finish with the chopped cilantro stems.
