Instant Pot Bacon Potato Corn Chowder
A creamy, hearty chowder packed with crispy bacon, sweet corn, and rustically mashed potatoes, made fast in the Instant Pot. Top it with shredded cheese, buttery crackers, and bacon crumbles for a cozy weeknight dinner.
Ingredients
- 1/2 lbthick-cut bacon · chopped into chunks
- —garlic · a generous amount
- 1 smallyellow onion · diced
- —spice blend · your choice of seasonings
- —black pepper
- —corn
- —frozen diced potatoes
- 3 cupschicken broth · add more as needed
- 1 cupheavy cream · about
- —shredded cheese · for topping
- —Ritz crackers · for topping
Steps

Put the chopped bacon into the cold Instant Pot, then turn it on to Sauté. Cook until the fat renders and the bacon is crispy.

Remove the bacon and set it aside for topping. Spoon off some of the extra bacon fat and throw it out, but don't pour it down the drain.

Add the garlic to the hot bacon fat, then add the diced onion. Scrape up the browned bits stuck to the bottom of the pot.

When the onions turn translucent, add the spice blend. Let the spices toast until fragrant.

Add pepper, then the corn and the frozen diced potatoes.

Pour in 3 cups of chicken broth.

Lock the lid, set the valve to Sealing, and pressure cook on high for 4 minutes.

Release the steam. Check that the potatoes are cooked through: they should mash easily when pressed against the side of the pot with a spoon.

Roughly mash the potatoes in the pot, then stir in about 1 cup of heavy cream.

Serve in bowls topped with shredded cheese, Ritz crackers and the bacon you set aside.
Creator's notes
Start the bacon in a cold pot so the fat renders evenly and the bacon crisps without burning at the edges. Use a thin liquid like broth for pressure cooking, not milk, and add the heavy cream at the end. Go easy on the broth because you can always add more but you can't take it out. Frozen diced potatoes work fine as a shortcut.
