Instant Pot Barbecue Beef over Mac and Cheese
A single chuck steak pressure-cooked with roasted garlic until it shreds, then coated in sticky honey barbecue sauce and broiled to crisp the edges. Piled over macaroni and cheese with broccoli on the side, it turns a too-small cut into a full dinner.
Ingredients
- 1 lbchuck steak · brought to room temperature
- —cowboy butter seasoning · homemade or store-bought; any seasoning you like works
- —avocado oil · neutral oil with a high smoke point for searing
- 4 clovesgarlic · large, crushed and peeled
- 1 cupbeef broth
- —sticky honey barbecue sauce
- —macaroni and cheese · for serving
- —broccoli · for serving
- —french fried onions · optional, for topping

Let the chuck steak come to room temperature so the seasoning sticks and it sears better, then season it.

Wash your hands after handling raw meat.

Add avocado oil to the bottom of the Instant Pot and heat it on sauté.

Place the chuck steak in seasoned side down and sear both sides for about 5 minutes total, until a good crust forms.

Crush and peel 4 large cloves of garlic and set them on top of the meat.

Pour in about 1 cup of beef broth.

Lock on the lid, set the valve to sealing, and pressure cook for 1 hour, then let the pressure release naturally.

Transfer the meat and the roasted garlic to a sheet pan and shred the beef, working the garlic into it.

Coat the shredded beef in sticky honey barbecue sauce.

Broil for about a minute, just until the edges crisp up.

Serve over macaroni and cheese with a side of broccoli, topped with french fried onions if you have them.
Creator's notes
Jessica meant to buy a chuck roast and ended up with a one-pound chuck steak, so she turned it into barbecue beef instead. She uses her own homemade cowboy butter seasoning and says she'll teach the recipe for it eventually.
