Lemon Raspberry Sugar Cookie Ice Cream Sandwiches
Scoops of white chocolate raspberry lemon ice cream pressed between soft sugar cookies, with crushed lemon sandwich cookies pressed around the edges. A bright, easy summer freezer dessert kids can help assemble.
Ingredients
- 8sugar cookies · makes 4 sandwiches; use 16 cookies for 8 sandwiches as shown
- —white chocolate raspberry lemon ice cream · slightly softened
- 10lemon sandwich cookies (lemon Oreos) · crushed, for rolling the edges

Place the lemon sandwich cookies in a zip-top bag and smash them into crumbs.

Lay the sugar cookies out on a tray, pairing them into sandwiches.

Scoop softened ice cream onto half of the cookies, using a modest scoop so it doesn't squeeze out.

Top each with a second sugar cookie and press down gently to spread the ice cream to the edges.

Roll or press the sides of each sandwich into the crushed lemon cookie crumbs to coat.

Freeze the sandwiches until firm, then serve.
Creator's notes
Jessica says the ice cream works best a little soft, straight from the grocery run, and that having a (far too silly) helper to smash the cookies is a requirement.
