  • 450 gcool water · 73 to 75°F
  • 0.7 to 0.8 ginstant yeast · about three-quarters of a 1/4 teaspoon
  • 665 g00 flour
  • 18 gsalt

Tomato Sauce

  • 1 28-ounce cancrushed tomatoes · 790g; preferably Bianco DiNapoli
  • 7 gsalt · 1 1/4 teaspoons

  • 70 to 80 gtomato sauce · about 1/3 cup per pizza
  • fresh buffalo-milk mozzarella · torn into small pieces

Creator's notes

Water temperature (73 to 75°F) and stone temperature (around 900°F, below about 950°F) are the details that make or break this pizza. The sauce recipe yields enough for roughly 8 pizzas, so freeze the extra. The video was filmed in a Gozney Dome XL as a sponsored placement.
