No-Recipe Sourdough Discard Cinnamon Rolls
Soft, sweet cinnamon rolls leavened entirely with sourdough discard instead of yeast, mixed by feel in the biggest bowl in the kitchen. The dough gets a long, slow overnight rise for a tangy, chewy crumb.
Ingredients
- —milk · warmed with the butter until just melted, not hot
- —butter · melted with the milk
- 2eggs
- —sourdough discard · enough to cover the bottom of the bowl — whatever came out of the starter jar
- —salt · helps develop the gluten and makes the dough chewier
- —sugar
- —vanilla paste
- —bread flour · added by feel until the dough comes together
- —water · a little, added by feel
Steps

Microwave the milk and butter together until the butter is just melted — warm, not hot and not ice cold.

Add the eggs, sourdough discard, salt, sugar, and vanilla paste to the milk and butter in a large bowl.

Stir everything together until the discard is mostly dissolved and the eggs are scrambled into the mixture.

Add bread flour a little at a time, along with a splash of water, mixing until a dough comes together.

Shape the dough into cinnamon rolls.

Let the rolls rise about 4 to 6 hours, or shape them just before bed and let them rise overnight.
