Odds and Ends Oat Bites
No-bake oat bites bound with peanut butter and maple syrup, loaded with chocolate chips, dried fruit, and seeds. Scoop, chill, and freeze them for a semi-sweet snack that drops straight into a lunch box.
Ingredients
- —old-fashioned rolled oats
- —raisins · dried cherries work too — use whatever dried fruit you have
- —chocolate chips
- 1/2 cuppeanut butter · binds everything together
- —maple syrup · binds everything together
- —hemp hearts
- —flax meal · ground, not whole — whole flax seeds don't digest properly
- —chia seeds
- —graham cracker crumbs · crushed graham crackers work
Steps

Add the oats, dried fruit, chocolate chips, hemp hearts, flax meal, chia seeds, and graham cracker crumbs to a large bowl. Measurements can be loose — as long as the mixture holds together in a ball, you're fine.

Add the peanut butter and maple syrup and stir until everything is evenly coated and the mixture binds together.

Portion with a #24 scoop and roll into balls; this batch yielded 15.

Chill or freeze the bites. Pull them straight from the freezer into a lunch box in the morning and they'll be defrosted by snack time.
Creator's notes
Use whatever odds and ends are in the back of your pantry — nuts, other seeds, whatever dried fruit you find. Double the batch and freeze half. Be careful serving these to small children: they're exactly the size and shape of a small esophagus.
