One-Pan Cheesy Beef and Broccoli Riseroni
Ground beef, toasted rice and snapped angel hair simmer together in beef broth until creamy, then get folded with tender broccoli and two kinds of melted cheese. A whole dinner in one pot, no boxed mix required.
Ingredients
- 1 poundground beef
- —minced garlic · a lot — "a metric ton"
- —dehydrated minced onion
- —all-purpose seasoning · whatever blend you like
- 1 1/2 cupsrice
- 1/4 poundangel hair pasta · snapped into small pieces
- —avocado oil · as needed if the pan is dry
- 1 boxbeef broth
- 1 cupwater
- 1 crownbroccoli · chopped into tiny florets
- 1 cupfreshly shredded cheddar cheese
- —shredded Tuscan cheese blend · added to taste

Brown the ground beef in a large pot, chopping it up as it cooks, until it is truly browned rather than gray. Wash your hands after handling the raw meat and its packaging.

If the beef is lean, leave the fat in the pan. Stir in the minced garlic, dehydrated minced onion, and all-purpose seasoning.

Add the rice and the snapped angel hair pasta and toast them in the fat left in the pan, adding a little avocado oil if the pan looks dry.

Spread everything into an even layer, then pour in the beef broth and the water. Simmer until most of the liquid is absorbed.

Stir in the finely chopped broccoli florets.

Add the shredded cheddar and the Tuscan cheese blend, then turn off the heat.

Stir everything together, cover with a lid, and let it sit so the broccoli finishes cooking and the cheese melts through before serving.
Creator's notes
Made up on the fly from whatever was on hand — prepped garlic, shredded cheese, and a crown of broccoli meant for other meals. Homemade riseroni instead of a boxed mix; break the pasta smaller if you like, it just tends to jump out of the pan.
