One-Pan Chicken Burrito Bowls
Everything for a loaded burrito bowl cooks together in a single skillet — taco-seasoned chicken, garlic, and lime simmered with tomato paste and toasted rice until fluffy. Pile on cheese, queso, corn, and taco sauce and scoop it up with chips.
Ingredients
- —avocado oil · for the pan
- 1small onion · diced
- —boneless chicken · cut into chunks; easier to cut semi-frozen
- —taco seasoning
- —garlic · a generous amount, minced
- —lime juice · a splash
- 1 1/2 tablespoonstomato paste
- 2 cupsrice
- 4 cupslow-sodium chicken broth · one carton
- 1 pouchblack beans
Toppings
- —lettuce
- —shredded cheese
- —sour cream
- —queso
- —cotija cheese
- —corn
- —taco sauce
- —tortilla chips · for scooping
Steps

Add a little avocado oil to a large pan and cook the diced onion over medium-high heat.

Cut the chicken into chunks and add it to the pan with the onion.

Season the chicken with taco seasoning, adding it off the heat so the seasoning doesn't clump, then stir in a generous amount of garlic and a splash of lime juice. Cook until the chicken is mostly, but not fully, done.

Stir in the tomato paste until it's well incorporated and coats everything.

Add the rice and toast it in the pan with the chicken, stirring, so it doesn't turn gummy.

Pour in the chicken broth (4 cups of liquid for 2 cups of rice) and add the black beans. Stir to combine.

Turn the heat down to medium, cover with a lid, and cook about 15 minutes, until the rice is tender and the liquid is absorbed.

Turn off the heat, replace the lid, and let it sit while you prep the toppings.

Spoon into bowls and top with lettuce, cheese, sour cream, queso, cotija, corn, and taco sauce. Serve with tortilla chips for scooping.

Jessica is upfront that this isn't an authentic arroz con pollo — it's her own take, "Jessica's house." Semi-frozen chicken is easier to cut into chunks, and toasting the rice in the pan keeps it from going gummy.
