One-Pan Sausage, Broccoli & Smoked Gouda Orzo
This one-pan fridge clean-out dinner has crispy jalapeño cheddar sausage and toasted orzo simmered in beef broth with broccoli. Smoked gouda is stirred in at the end to make it creamy.
Ingredients
- —oil · for the pan
- —jalapeño cheddar sausage
- —orzo · a partial box
- 1 boxbeef broth · the whole box; any broth you have works
- 1 bagfrozen broccoli
- 1 blocksmoked gouda · shredded
Steps

Heat oil in a large nonstick pan with a lid until hot.

Add the jalapeño cheddar sausage and cook until it's a little brown and crispy.

Add the orzo and stir it around in the pan to toast it. This keeps the pasta from getting gummy and mushy.

Pour in the beef broth. You don't need extra salt because the sausage, broth and cheese are already salty.

Add the frozen broccoli, bring to a simmer, cover and let it simmer until about half the liquid is absorbed.

Stir in the shredded smoked gouda until creamy. Cover again and cook 3-4 more minutes, until the orzo is done and most of the liquid is absorbed.

Turn off the heat, stir so nothing sticks, put the lid back on for a moment, then serve.
Creator's notes
Toast the orzo before adding the liquid or it turns gummy. Skip the salt because everything in the pan is already salty. It's a fridge clean-out meal, so use whatever cheese and broth you have.
