One Pot Spicy Sausage Rigatoni
Hot Italian sausage, grated onion, and Calabrian chilies simmer with crushed tomatoes and rigatoni in a single Dutch oven, then finish in the oven until the pasta drinks up the sauce. A swirl of cream, Parmesan, and basil at the end makes it rich, spicy, and far easier than it tastes.
Ingredients

- 680 ghot Italian sausage · 1½ lbs
- 250 gonion, grated · 1 large
- 20 ggarlic, minced · 5–6 cloves
- 50 gCalabrian chilies, chopped · 3½ tbsp
- 15 gfine salt · 2½ tsp, divided
- 794 gcrushed tomatoes · 1 28oz can
- 5 ggranulated sugar · 1 tsp
- 1000 gwater · 4 cups
- 454 gdry rigatoni pasta · 1 lb
- 100 gheavy cream · 7 tbsp
- 50 gaged Parmesan, finely grated · 1 cup, plus more for serving
- 10 gfresh basil, minced · ¼ cup
For Serving

- —Extra Parmesan
- —Olive oil

Preheat the oven to 425°F/220°C.

Heat a long drizzle of olive oil in a Dutch oven over medium-high heat. Add the sausage and brown it, crumbling as fine as possible, until nearly cooked through.

Add the grated onion, minced garlic, Calabrian chilies, and half of the salt. Cook for 2-3 minutes, until softened.

Add the crushed tomatoes, water, remaining salt, and sugar. Stir and bring to a simmer.

Stir in the rigatoni until fully submerged.

Bake uncovered for 20 minutes, stirring every 5 minutes.

Carefully pull the pot from the oven. Stir in the basil, cream, and Parmesan. Adjust seasoning with salt.

Let rest at least 10 minutes.

Serve topped with grated Parmesan, red pepper flakes, cracked black pepper, and olive oil.
