Pantry Clean-Out Smoked Sausage Tater Tot Casserole
A skillet-to-oven casserole of smoked sausage, corn, black beans and chili beans in a cheesy, cowboy-seasoned base, crowned with a neat layer of crisp tater tots. Made entirely from pantry, fridge and freezer odds and ends — and somehow better for it.
Ingredients
- —butter · for the skillet
- —oil · a little, added with the butter
- —frozen diced onions · partial bag
- —cowboy seasoning · store-bought or homemade
- —smoked sausage · sliced
- —garlic · a lot, minced
- —fresh corn on the cob · kernels cut off the cob
- 1 canseasoned black beans · added with the liquid
- —mild chili beans · added with the liquid
- —diced green chilies · added with the liquid
- —tomato paste
- —shredded cheese · for the filling plus more for the top
- 1 bagfrozen tater tots
- —sour cream · for serving
Steps

Heat a large oven-safe skillet over medium heat and add butter and a little oil.

Add the frozen onions and cowboy seasoning and saute.

Add the sliced smoked sausage and cook, then stir in plenty of garlic.

Cut the kernels off the corn cobs and add them to the skillet.

Stir in the canned black beans, chili beans and diced green chilies with their liquid, along with the tomato paste.

Stir in the shredded cheese until combined.

Arrange the tater tots in an even layer over the top of the skillet.

Bake until the tater tots are done, then top with more shredded cheese and return to the oven until melted.

Spoon into bowls and top with sour cream.
Creator's notes
A true pantry clean-out — Jessica made it up on the spot with what was in her pantry, fridge and freezer. She uses homemade cowboy seasoning but says any store-bought version works. The beans and chilies go in juice and all, because "the juice is the seasoning."
