Parmesan Chicken Cutlet Garlic Bread Sandwiches
Crispy parmesan-crusted chicken cutlets on toasted garlic bread, topped with pizza sauce and melted mozzarella. It's an easy, cheesy open-faced sandwich for dinner.
Ingredients
For the chicken cutlets
- —boneless skinless chicken breasts · cut vertically into cutlets, not horizontally
- 3eggs
- —salt
- —black pepper · freshly cracked
- —Italian seasoned bread crumbs · about half of the breading mixture
- —grated parmesan cheese · about half of the breading mixture
- —oil · enough to cover the bottom of the pan
For the sandwiches
- —garlic bread · toasted
- —pizza sauce
- —mozzarella cheese
Steps

Cut the chicken breasts vertically into cutlets. Instead of pounding them, smash them flat with the heel of your hand.

Beat the eggs with salt and freshly cracked black pepper.

In a separate bowl, mix equal parts Italian seasoned bread crumbs and parmesan by hand.

Dip each cutlet in the egg, then in the bread crumb mixture, pressing the crumbs in so they stick. Keep one hand for the wet dip and one for the dry.

Heat enough oil to cover the bottom of a pan. Fry the cutlets for 3 to 4 minutes per side, until golden and cooked through.

Toast the garlic bread. Spread pizza sauce on each piece and top it with a chicken cutlet.

Top each cutlet with mozzarella cheese and return the sandwiches to the oven until the cheese melts.
Creator's notes
Jessica makes the chicken Rita's way: she cuts the breasts vertically and smashes them with the heel of her hand instead of pounding them. She wants the breading to be 50% bread crumbs and 50% parmesan. She shallow-fries the cutlets instead of deep-frying them.
