Pineapple Upside Down Cake Donuts
Boxed pineapple cake mix jazzed up with melted butter and pineapple juice, baked in a donut pan over a brown sugar–butter caramel and crushed pineapple. Personal-sized upside down cakes with sticky, buttery tops.
Ingredients
For the cake
- 1 boxpineapple supreme cake mix
- —melted butter · same amount as the oil called for on the box, substituted for the oil
- 3eggs · or whatever the box calls for
- 1 cup100% pineapple juice · substituted for the water the box calls for
- —baking spray · for the pan
For the topping
- 1/2 stickbutter · melted
- 1 cupbrown sugar
- —crushed pineapple · pineapple rings also work, one per well
Steps

Melt the butter and add it to a bowl in place of the oil the cake mix calls for.

Crack in the eggs and add 1 cup of pineapple juice in place of the water the box calls for.

Add the pineapple cake mix and whisk everything together until smooth. Set aside.

Spray a donut pan with baking spray.

Stir the melted half stick of butter together with the brown sugar until combined.

Spoon about a tablespoon of the brown sugar mixture into each well.

Snip the crushed pineapple smaller with scissors if needed and sprinkle a little into each well, or lay a pineapple ring in each one.

Scoop the batter over the pineapple in each well.

Bake until done, about 18 minutes.

Cool for a minute, then flip them out of the pan and serve.
Creator's notes
She flipped them out too soon — the failure was impatience, so let them cool a bit before turning them out. She only made one pan and suggests turning the leftover batter into a sheet pan cake.
