Pork Cottage Pie
A hearty, budget-friendly riff on cottage pie. Seasoned ground pork and mixed vegetables simmer in a savory tomato-beef gravy, then go under a layer of lumpy mashed red potatoes and melted cheese.
Ingredients
- —oil · for the pan
- 24 ouncesground pork
- —red skin potatoes · boiled
- —salt · to taste
- —black pepper · to taste
- —dehydrated minced onion
- —garlic powder
- —mustard powder · a little
- —celery seed · a tiny bit
- —dried thyme
- 2 tablespoonstomato paste · a couple tablespoons
- 3 tablespoonsall-purpose flour · a few tablespoons
- 1 canbeef consomme
- 1 canwater · one consomme can's worth
- —frozen peas, carrots and corn · any mix of leftover frozen vegetables
- —shredded cheese · for topping
- —cooking spray · optional, for the baking dish
Steps

Boil the red skin potatoes in a pot of water until tender.

Heat oil in a large pan and add the ground pork. Don't drain the fat, because it will become the base of the gravy.

Season the pork with salt, pepper, dehydrated minced onion, garlic powder, mustard powder, celery seed and thyme.

Cook the pork until it is browned and a little crispy on the edges, not gray.

Stir in the tomato paste and cook for a few minutes until it darkens and caramelizes slightly.

Sprinkle in the flour and stir to coat the meat, cooking briefly to get rid of the raw flour taste.

Pour in the beef consomme and scrape up the browned bits from the bottom of the pan. Add one can's worth of water.

Add the frozen vegetables, then season with a little more salt and pepper.

Spray a baking dish if you like and spread the meat and vegetable mixture in it.

Drain the potatoes and mash them by hand, leaving them a little lumpy. Spread them over the filling.

Top the potatoes with cheese.

Bake at 350°F until heated through and the cheese is melted, then serve.
Creator's notes
Ground pork is much cheaper than ground beef, and the creator says this version isn't traditional. Use up partial bags of frozen peas, carrots or corn. The creator mashes the potatoes by hand so they stay a little lumpy.
