Pressure Cooker Beef Tips and Gravy
Flour-dusted beef stew meat pressure-cooked with onions, mushrooms, and garlic into a rich, savory gravy. Spoon it over egg noodles for a hearty weeknight dinner that tastes like it simmered all day.
Ingredients
- 2 lbbeef stew meat · two 1-pound packages
- 1/4 cupall-purpose flour
- —salt · to taste
- —black pepper · to taste
- —avocado oil · for sautéing
- 2small onions · thinly sliced
- 8 ozmushrooms
- 4 clovesgarlic · peeled and lightly crushed
- 1 packetbeefy onion soup mix
- 2 2/3 cupswater · 2 cups with the soup mix, plus 2/3 cup added around the edge of the pot
- 1-2 TbspWorcestershire sauce
- —tomato paste · a healthy dollop
- —egg noodles · for serving

Add the beef stew meat to a large bowl with the flour, salt, and pepper. Toss until the meat is evenly coated. Wash your hands after touching raw meat and its packaging.

Set your pressure cooker to sauté and let it get hot, then add avocado oil.

Add the sliced onions and mushrooms and let them sweat down.

Make a well in the center of the pot and pour in the coated beef. Let it sear, stirring every so often and scraping up any stuck-on bits so you don't get a burn notice.

Add the crushed garlic, the packet of beefy onion soup mix, and 2 cups of water. Stir and scrape the bottom of the pot with a wooden spoon to release the browned bits.

Stir in the Worcestershire sauce and a healthy dollop of tomato paste.

Pour the remaining 2/3 cup water around the edge of the pot so nothing burns.

Lock the lid on and pressure cook for about 30 minutes, then let the pressure release naturally for 10 minutes before quick-releasing the rest. Wait for the pin to drop before removing the lid.

Serve the beef tips and gravy over egg noodles.
Creator's notes
Jessica adds the mushrooms and onions before searing the beef and notes that in a perfect world she'd add them at the end — but it works out fine either way. Stuck-on bits at the bottom are flavor, just be sure to scrape them up or the pressure cooker will throw a burn notice.
