Raspberry Lemon Cream Cheese Coffee Cake
A no-recipe experiment that turned out great: boxed cake mix loaded with cream cheese, raspberry filling, and heavy cream, then swirled and baked into a rich, tender coffee cake. Sweet, tangy, and impossible to stop eating.
Ingredients
- —cream cheese · softened (microwave briefly)
- 1 boxcake mix
- —raspberry filling · about a cup to start
- 1 stickbutter · melted
- 1egg
- 1/3 cupheavy cream · plus a splash more if needed
- —vanilla bean paste · a splash — she poured a generous amount
Steps

Soften the cream cheese by microwaving it briefly.

In a bowl, combine the cake mix with the raspberry filling, egg, heavy cream, and vanilla bean paste.

Add the melted butter and mix everything together.

Add the softened cream cheese, pour it over the batter and swirl it in rustically — don't fully incorporate it.

Transfer to a baking pan and bake until a skewer inserted in the center comes out clean. The center may drop slightly.

Let cool completely before slicing.
