Sheet Pan Sausage, Cabbage & Sweet Potatoes
Thick cabbage wedges and chunks of sweet potato roast alongside smoked sausage on a single sheet pan, then get finished with butter and freshly grated Parmesan. Everything comes out tender, crispy at the edges, and rich enough to feel like far more work than it was.
Ingredients
- 1head green cabbage · outer leaves, stem, and core removed; cut into about 1-inch wedges
- 2large sweet potatoes · peeled and cut into chunks
- —olive oil · for drizzling
- —all-purpose seasoning blend · creator's homemade blend, similar to Badia Complete or Lawry's Season Complete
- —smoked sausage · already cooked/smoked
- —butter · a little for each cabbage steak
- —fresh Parmesan · grated over the top
Steps
- 1
Remove the outer leaves, stem, and core from the cabbage, keeping the head together, and cut it into roughly 1-inch wedges at the thickest part.
- 2
Peel the sweet potatoes and cut them into chunks.
- 3
Spread the sweet potatoes on a rimmed sheet pan and nestle the cabbage wedges in between, making sure every piece of sweet potato is fully in contact with the pan so it cooks through.
- 4
Drizzle the vegetables with olive oil, season with the all-purpose blend, and lightly toss to coat.
- 5
Work the smoked sausage into any available space on the pan, keeping the cabbage and sweet potatoes in contact with the pan since the sausage is already smoked and doesn't need to cook.
- 6
Roast at 400°F for about 25 to 35 minutes, until the sweet potatoes are tender rather than firm.
- 7
Top each cabbage steak with a little butter and return the pan to the oven so the butter seeps in and bastes the cabbage.
- 8
Grate fresh Parmesan over everything and bake for a final 5 minutes, then serve.
Creator's notes
The creator makes her own all-purpose seasoning blend (a mashup of Badia Complete and Lawry's Season Complete) and has the recipe for it on her blog. She notes the butter step is optional but worth it, and to roast until it looks done rather than watching the clock.
