Simple Cast Iron Steak with Garlic Butter
Thick top sirloin seared hard in a screaming-hot cast iron skillet, then basted with melted butter and whole garlic cloves. Four minutes a side is all it takes for a steakhouse crust and a rosy medium center.
Ingredients
- 3top sirloin steaks · dried and brought to room temperature
- —salt
- —black pepper
- —avocado oil · or any neutral high smoke point oil
- 2 tablespoonsbutter
- —garlic cloves · shucked
- —sea salt · for finishing
Steps

Pat the steaks dry, bring them to room temperature, then season generously with salt followed by pepper.

Set a cast iron skillet over high heat and add avocado oil. Let the pan get screaming hot — the oil should shimmer when you swirl it.

Lay the steaks in the pan, working in batches so you don't crowd it. Sear undisturbed for 4 minutes.

Flip and sear 4 minutes on the second side. Check with a thermometer: 130°F for medium rare, about 135°F for medium.

Stand the steaks on their edges and sear each edge for a few seconds, including the fat cap if there is one.

Turn off the heat. Add the butter and whole garlic cloves to the pan and spoon the garlic butter over the steaks.

Transfer the steaks to a board and rest a few minutes so the juices settle back into the meat before slicing.

Finish with a sprinkle of flaky sea salt and serve.
Creator's notes
Don't touch the steak for the full four minutes per side. If you're unsure how done it is, use a thermometer — and don't eat it well done.
