Slow Cooker Chicken and Gravy Bowls
Chicken quarters cooked low and slow until the meat falls off the bone, then folded back into gravy and piled over mashed potatoes and buttered corn. It tastes like Thanksgiving on a weeknight, built almost entirely from leftovers.
Ingredients
- 4chicken quarters · leftover roasted chicken quarters; rotisserie chicken works as a shortcut
- —Kinder's The Blend seasoning · salt, pepper, garlic and onion; any all-purpose blend works
- —paprika · for color
- 1 cupchicken broth or water · broth preferred; water is fine
- —gravy · leftover homemade gravy or a can of gravy
- —mashed potatoes · for serving; microwave mashed potatoes are fine
- —corn · a bag of microwaved corn, salted and buttered, for serving
- —butter · for the corn
- —salt · for the corn

Place the chicken quarters in the slow cooker and season with the all-purpose blend and a sprinkle of paprika for color. Wash your hands after handling raw chicken.

Pour in the chicken broth (or water).

Cover and cook on low all day, or on high for about 4 to 5 hours, until the meat falls off the bone. Don't expect crispy skin — plan on pulling it off.

Set out two bowls: one for bones and skin, one for meat. Pull the chicken off the bones.

Reserve about a cup of the cooking liquid and pour off the rest.

Return the pulled chicken to the slow cooker with the reserved cooking liquid and the leftover gravy. Cook on high while you get the sides ready.

Microwave the mashed potatoes, and microwave the corn, then salt and butter it.

Build a bowl: potatoes, corn, then the chicken and gravy over the top.
Creator's notes
Jessica made this from leftovers — four chicken quarters from a roasted dinner and gravy she'd made a couple of days earlier. She forgot to turn the slow cooker on for the first two and a half hours and switched it to high to catch up. Her shortcut: skip the slow cooker entirely and use rotisserie chicken with a can of gravy.
