Strawberry Crunch Ice Cream Sandwiches
Store-bought sugar cookies hug a slab of vanilla ice cream, then get rolled in a crushed golden Oreo and freeze-dried strawberry crunch. A no-bake freezer treat that tastes like the strawberry crunch bar of your childhood.
Ingredients
- 1 cupfreeze-dried strawberries · approximate
- 6golden Oreos
- 12pre-made sugar cookies · from the grocery store bakery section; 2 per sandwich
- 6ice cream sandwich–shaped ice cream bars · store-bought, pre-shaped ice cream slabs
Steps

Add the freeze-dried strawberries and golden Oreos to a gallon Ziploc bag.

Crush the bag aggressively until everything is broken down into a coarse crumb.

Pour the strawberry crunch mixture onto a plate and spread it out.

Pop an ice cream slab out onto each of 6 sugar cookies.

Top each with a second sugar cookie and press down until the ice cream squeezes out slightly at the edges.

Roll each sandwich in the strawberry crunch mixture so the exposed ice cream is fully coated.

Freeze until firm, then serve whenever you want a sweet treat.
