Sweet and Spicy Chicken with Costco Chicken Chunks
Air-fried chicken chunks tossed in a glossy pineapple-soy sauce with tender-crisp broccoli and juicy pineapple. Sweet, savory, and finished with chili crunch for heat.
Ingredients
- —frozen breaded chicken breast chunks · as many as your family will eat
- —broccoli florets · chopped
- 1 canpineapple · juice reserved
- 3/4 cuppineapple juice · from the can
- 2 tablespoonsoyster sauce · a couple tablespoons
- 2 tablespoonsdark soy sauce · two tablespoons-ish
- —ginger · a healthy squirt
- —hoisin sauce
- —garlic · a metric ton
- —orange juice
- 2 tablespoonscorn starch · probably two tablespoons
- —honey
- 1 teaspoonchili crunch
- —white pepper
- —MSG
- —dehydrated onion
- 1/4 cupwater · as needed to thin the sauce
- —toasted sesame oil

Air fry the frozen chicken breast chunks until they are very crispy — crispier than the package says, so they hold up in the sauce.

In a measuring cup, combine 3/4 cup pineapple juice from the can, oyster sauce, dark soy sauce, ginger, hoisin sauce, garlic, orange juice, corn starch, honey, and chili crunch.

Pour the sauce into a pan with a lid, add the broccoli florets, and put the lid on to cook the sauce and steam the broccoli together.

Add white pepper, MSG, and dehydrated onion to the sauce.

If the sauce looks too thick, stir in about 1/4 cup water and put the lid back on so the broccoli keeps steaming.

Add the pineapple chunks and a drizzle of toasted sesame oil to the sauce.

Add the crispy chicken to the pan and fold everything together until coated. Serve right away.
Creator's notes
Jessica takes a shortcut with Costco frozen breaded chicken chunks instead of breading chicken herself. Get the chicken extra crispy in the air fryer or it won't stand up to the sauce.
