Taco Gnocchi Skillet
A one-skillet mashup of taco night and pillowy gnocchi — seasoned ground beef simmered with fire-roasted corn, green chilies, black beans and salsa, then finished with melted Mexican cheese. Scoop it into a bowl and pile on all your usual taco toppings.
Ingredients
- 1 packageground beef
- 1 packettaco seasoning · about a packet's worth; creator uses her own blend
- —water · for the taco seasoning
- 1 canfire roasted corn · drained
- 1 candiced green chilies
- —seasoned black beans · if using unseasoned canned beans, drain and rinse
- 1 1/2 cupssalsa · any kind you like
- 2 packagesshelf-stable gnocchi
- 2 cupsbeef broth
- —shredded Mexican-style cheese
- —sour cream · for topping
Steps

Heat a large skillet over medium-high heat and add the ground beef.

Chop the beef up aggressively and brown it until no gray remains, then drain the fat.

Stir in the taco seasoning and a splash of water so the beef resembles taco meat.

Add the drained fire roasted corn, diced green chilies, seasoned black beans, and salsa, and stir to combine.

Stir in the shelf-stable gnocchi and the beef broth.

Bring to a simmer, cover with a lid, and cook until most of the liquid has absorbed and the gnocchi looks puffy.

Add the shredded cheese and stir until melted through.

Bowl it up and top with sour cream, or whatever you'd put on a taco.
Creator's notes
Invented on the fly from whatever was in the house — you can stop before the gnocchi and eat the beef mixture in a tortilla like a taco.
