Weeknight Chicken Parmesan
Thin-pounded chicken breasts get a seasoned egg dip on the way to a comforting chicken parm dinner. Not authentic — just what's for dinner on a night you don't feel like cooking.
Ingredients
- 3chicken breasts · trimmed and pounded thin
- 2eggs
- —salt
- —pepper
Steps
- 1
Trim the chicken breasts of any unwanted bits, then pound or slice them thin into cutlets.
- 2
Wash your hands thoroughly after handling the raw chicken.
- 3
Crack 2 eggs into a shallow dish, season with salt and pepper, and whisk well to combine.
- 4
Dip the chicken cutlets in the seasoned egg wash before breading and cooking.
Creator's notes
Jessica makes this because her husband keeps hinting for chicken parmesan — and she's now cooking three breasts instead of two since her two small kids finally eat what she makes. Her cutlets aren't as thin as some people like them, and she's fine with that.
