Bacon Cheeseburger Soup
A cozy, cheesy one-pot soup with browned ground beef, potatoes, and a ketchup-mustard cheeseburger base, melted smooth with American cheese. It's finished with crispy bacon and a little dill relish, and it's built for weeknight family dinners.
Ingredients
- —bacon · cooked crispy, for topping
- —garlic · a lot
- —onions
- 1 bagSimply Potatoes
- 1 lbground beef · 95% lean
- 1-2 tbspall-purpose flour
- —mustard
- 3 tbspketchup
- 1 tbsptomato paste · about
- —black pepper · freshly cracked
- —salt · go easy
- —beef broth
- 2 cupswater
- 13 slicesAmerican cheese
- —dill relish · for topping
Steps
- 1
Cook the bacon in a Dutch oven until crispy. Remove it to use as a topping and leave most of the bacon fat in the pot.
- 2
Add the garlic to the hot bacon fat and stir until fragrant.
- 3
Add the onions and cook until they start to soften.
- 4
Add the bag of potatoes and stir to coat in the bacon fat. Remove the potatoes, garlic, and onions from the pot and set them aside.
- 5
Add the ground beef to the pot. Brown it until it's no longer gray, breaking it up as it cooks.
- 6
Stir in 1-2 tablespoons of flour and cook for a minute or two to cook off the raw flour taste.
- 7
Stir in the mustard, about 3 tablespoons of ketchup, and about 1 tablespoon of tomato paste. Cook until the tomato paste caramelizes a little.
- 8
Season with freshly cracked black pepper and a little salt. Don't overdo the salt, since the potatoes cooked in bacon fat.
- 9
Add the beef broth, the potatoes, garlic and onions, and 2 cups of water. Bring to a simmer, then cover, turn the heat to medium-low, and simmer until the potatoes are tender.
- 10
Add the American cheese and stir until it's melted.
- 11
Serve topped with the crispy bacon and a little dill relish.
Creator's notes
Mustard helps the cheese emulsify and gives the soup a cheeseburger flavor. Cooking the flour first keeps the soup from tasting powdery.
