Brown Butter Pumpkin Loaf
A moist, tender loaf made with freshly grated pumpkin, nutty brown butter, and a touch of white miso, studded with chopped dark chocolate. It's especially good warmed up with a pat of butter on top.
Ingredients
- 1/2 mediumpumpkin pie pumpkin or butternut squash · about 400g, peeled, seeded, and grated
- 1/2 cupsalted butter · 113g
- 2 tablespoonswhite miso · 35g
- 1/2 cupgranulated sugar · 100g
- 1/2 cupdark brown sugar · 65g, densely packed
- 2large eggs
- 1 teaspoonvanilla extract
- 1 1/2 cupsall-purpose flour · 210g
- 1 teaspoonbaking powder
- 1/2 teaspoonbaking soda
- 1/2 teaspooncinnamon
- 1/4 teaspoonDiamond Crystal kosher salt · use half if using Morton's
- 120 gramsdark chocolate · chopped

Preheat the oven to 350°F convection or 375°F standard. Line a 9x5-inch loaf pan with parchment paper, greasing the edges to help it stick.

Peel and seed the pumpkin or butternut squash. Grate 400g of it on the large holes of a box grater into a large bowl.

In a medium pan over medium heat, melt the butter and let it fizz and foam until the milk solids are toasted and the butter is nicely browned. Immediately pour it over the grated squash.

Add the white miso and mix until it is evenly incorporated.

Add the granulated sugar and dark brown sugar and mix well. Crack in the eggs, add the vanilla, and mix again.

Add the flour, baking powder, baking soda, cinnamon, and salt. Mix until you have a thick batter.

Fold in the chopped dark chocolate, then pour the batter into the prepared loaf pan.

Bake for 55-60 minutes, until the loaf is domed and doesn't jiggle in the middle. A toothpick may come out with some melted chocolate on it.

Let cool in the pan until you can easily lift it out with bare hands. Cut into thick slices and serve, ideally warmed with butter on top.
Creator's notes
The toothpick test may not work because melted chocolate can stick to it. Look for a domed loaf that doesn't jiggle in the middle instead. It's especially good warmed up with butter on top.
