Cheesy Beefy Broccoli Rice-A-Roni Skillet
A one-skillet mash-up of Hamburger Helper and Rice-A-Roni, with toasted rice and angel hair simmered in beef broth, then folded with cheddar, Parmesan, and tender broccoli. No seasoning packet required — and the cheese can go on top for the picky eaters.
Ingredients
- 1 lb85/15 ground beef
- 4 clovesgarlic · minced
- 1 tbspdehydrated minced onion
- 1 tbspavocado oil
- 1 tbspall-purpose seasoning · creator uses her house blend
- 1 1/2 cupslong-grain white rice
- 1/4 lbangel hair pasta · broken into roughly 1-inch pieces
- 4 cupsbeef broth
- 1 cupwater
- 1 cupfreshly shredded cheddar cheese
- 1/2 cupshaved Parmesan or Tuscan-blend cheese
- 1broccoli crown · chopped into small baby florets
Steps

Brown the ground beef in a large skillet over medium-high heat, breaking it apart as it cooks. Drain excess grease if needed.

Stir in the rice, broken pasta, garlic, dehydrated onion, avocado oil, and seasoning. Cook 2-3 minutes, stirring often, until the pasta turns lightly golden.

Pour in the beef broth and water, stir well so nothing sticks to the bottom, and bring to a boil.

Reduce heat to medium-low, cover, and cook 15-20 minutes, until the rice and pasta are tender and most of the liquid is absorbed.

Check the rice. If it is still firm but the skillet looks dry, add a small splash of broth or water and cook a few minutes more.

Stir in the broccoli, cheddar, and Parmesan or Tuscan blend until the cheese starts melting and the broccoli is evenly distributed.

Replace the lid and let it sit 5 minutes so the cheese melts and the broccoli steams without turning to mush.

Stir once more, taste for seasoning, and spoon into bowls.
Creator's notes
If your kids are less picky, mix the cheese right into the meat instead of layering it on top.
