Chicken Salad Lettuce Cups
Creamy shredded chicken salad made with cottage cheese, mayo, celery and red onion, scooped into crisp green leaf lettuce cups. A fresh, light lunch that comes together in minutes.
Ingredients
- 1large boneless/skinless chicken breast, seasoned and cooked · about 3/4-1 lb; sprinkled with all-purpose seasoning and air-fried
- 1/2 cupcottage cheese
- 1/2 cupmayo
- 1/2 stalkcelery · diced finely
- 2 Tbspred onion · diced finely
- —Salt and pepper · to taste
- 1 headgreen leaf lettuce · leaves separated, washed and dried
Steps

Shred the cooked chicken breast with your fingers or two forks. If the shreds are long, snip them shorter with scissors right in the bowl.

Add the cottage cheese, mayo, celery, red onion, salt and pepper to the bowl.

Mix everything together and adjust the seasoning to taste.

Scoop the chicken salad into a lettuce leaf, roll it up like a little taco, and eat.
