Chocolate Zucchini Cake
A three-layer chocolate cake made impossibly moist and fudgy by sour cream, oil, and grated zucchini that melts right into the crumb. Finished with a rich chocolate buttercream built on a melted-chocolate base, it's a decadent celebration cake nobody guesses has vegetables in it.
Ingredients
For the cake
- 4 1/2 cupszucchini · freshly grated
- —sour cream
- —oil
For the chocolate buttercream
- —chocolate · melted, for the ganache base
- —butter
Steps

Grate the zucchini fresh and fold it into the chocolate cake batter along with the sour cream and oil.

Divide the batter between three cake pans and bake until set.

Melt the chocolate and use it as the base for the chocolate buttercream.

Stack and frost the cooled layers with the chocolate buttercream.
