Crispy Zucchini Fries (Zucchini Fritti)
Zucchini strips marinated in garlic dip and spices, then fried in a seltzer batter that puffs up light and airy around them. Crisp outside, juicy inside, and made for dunking in more garlicky dip.
Ingredients
- 1zucchini squash · cut into long thin strips
- 1 dollopgarlic dip · for the marinade, plus more for serving
- —spices · lots, for the marinade
- —seltzer · for the batter
- —neutral oil · for frying
- —spice mix · your favorite, for tossing after frying
Steps

Cut the zucchini into long, thin strips.

Marinate the zucchini strips in a dollop of garlic dip and lots of spices.

Coat the marinated zucchini in a light, airy batter made with seltzer.

Fry the zucchini in hot oil until light golden and crispy and the batter has puffed up all around them.

As soon as they come out of the oil, toss them in your favorite spice mix.

Serve hot with garlicky lemony dip for dunking.
Creator's notes
The seltzer in the batter is what gives the coating its light, airy texture. Marinating the zucchini in the garlic dip before battering builds in flavor.
