Easy Banana Chocolate Chip Muffins
Unbelievably soft, moist banana muffins studded with melty semisweet chocolate chips. The batter stirs together in minutes and bakes in about 20, making it a perfect way to use up overripe bananas.
Ingredients
- 1 1/2 cupsall purpose flour · 180g
- 1 teaspoonbaking soda
- 1/2 teaspoonsalt
- 2/3 cupsugar · 113g
- 1 cupsemisweet chocolate chips · plus more for the tops if desired
- 3medium ripe bananas · or 1 cup mashed banana
- 1/3 cupmelted butter · slightly cooled (75g)
- 1large egg
- 1 teaspoonvanilla · 5ml

Preheat the oven to 375F and line a muffin tin with paper liners.

Combine the flour, salt, baking soda, and sugar in a bowl, whisk together, and set aside.

Mash the bananas in a large bowl, then add the egg, melted butter, and vanilla and mix to combine.

Add the dry ingredients to the wet and fold together with a spatula until almost combined. Add the chocolate chips and continue mixing until they are distributed and the batter comes together.

Distribute the batter into the muffin tin and top with additional chocolate chips if desired.

Bake at 375F for 17-20 minutes, or until a toothpick inserted in the center comes out clean.
