Easy Blackberry Cobbler

A one-bowl cobbler where buttery batter bakes up and around sugared blackberries into a golden, tender crust. It goes together in about 10 minutes and comes out jammy, warm, and made for a scoop of vanilla ice cream.

Ingredients

  • 1 1/2 cupsgranulated sugar · 300g; divided — 1 cup for the batter, 1/2 cup for the berries
  • 1 1/2 cupsself-rising flour · 180g
  • 1 cupwhole milk · 240ml
  • 2 teaspoonsvanilla extract
  • 1/2 cupmelted butter · 120ml
  • 3 cupsfresh blackberries · 510g; or frozen blackberries

Steps

Creator's notes

No biscuit dough to cut in and no crust to roll — the batter climbs up around the fruit as it bakes. Best served warm with whipped cream or vanilla ice cream.
