Easy Brookies
Half fudgy brownie, half chocolate chip cookie, baked together into one rich, decadent bar. A thin layer of glossy brownie batter gets topped with spoonfuls of cookie dough so both treats bake into every square.
Ingredients
For the brownie layer
- 1/2 cupunsalted butter · melted (113g)
- 1/3 cupcocoa powder · 35g
- 1/2 cupgranulated sugar · 100g
- 1/2 cuppacked light or dark brown sugar · 110g
- 1/2 teaspoonsalt
- 2large eggs · room temperature
- 1 teaspoonvanilla extract
- 1/2 cupall-purpose flour · 60g
- 3/4 cupsemisweet chocolate chips or roughly chopped chocolate · 135g
For the cookie layer
- 1/2 cupunsalted butter · room temperature (113g)
- 1/2 cupgranulated sugar · 100g
- 1/4 cuppacked light or dark brown sugar · 55g
- 1 teaspoonvanilla extract
- 1large egg · room temperature
- 1/2 teaspoonsalt
- 1/2 teaspoonbaking powder
- 1/4 teaspoonbaking soda
- 1 1/3 cupsall-purpose flour · 160g
- 1 cupsemi-sweet chocolate chips · 180g

Preheat the oven to 350°F. Line a 9x13 baking dish with parchment or foil.

Combine the melted butter and cocoa powder in a large mixing bowl and whisk until the cocoa is fully dissolved. Add the granulated sugar, brown sugar, and salt, and whisk until the sugar is all moistened. Whisk in the eggs and vanilla and beat well for about 1 minute (beating the eggs and sugar very well is the secret to glossy brownies).

Add the flour and mix with a spatula until a few streaks remain, then fold in the chocolate chips, scraping the bowl down and mixing in any errant flour.

Transfer the brownie batter to the prepared pan and spread into a thin layer, then set aside.

In a large mixing bowl with a hand mixer, or a stand mixer fitted with the paddle attachment, beat the butter, granulated sugar, and brown sugar on high for 3 to 4 minutes until light and fluffy, stopping to scrape the bowl down as needed.

Mix in the vanilla and egg, then scrape the bowl down once more.

Add the salt, baking soda, and baking powder and mix until combined.

Pour in the flour and mix until almost combined, then fold in the chocolate chips by hand with a spatula, reserving a handful to sprinkle on top later.

Drop spoonfuls of the cookie dough onto the brownie batter. You don't need full coverage — it's nice to see the brownie batter peeking through after baking.

Cover the pan with foil and bake for 20 minutes. Carefully remove the foil, then bake for another 20 minutes uncovered. Let the brookies cool in the pan before removing and cutting.
Creator's notes
The secret to glossy brownies is beating the eggs and sugar very well. Reserve a handful of chocolate chips to sprinkle over the cookie dough before baking.
