Easy Cake Pops
Bite-sized balls of moist vanilla cake bound with frosting, dipped in a candy shell and finished with rainbow sprinkles. A cheerful party treat that doubles as a fun weekend project with kids.
Ingredients
- 1 boxvanilla cake mix · 15.25-ounce box
- 1 cupwater · 240ml
- 1/2 cupvegetable oil · 120ml
- 3large eggs
- 1 cupfrosting
- 12 ouncescandy melts · or chocolate melting wafers
- —sprinkles · for decorating, optional

Preheat the oven to 350°F. Grease a 9x13-inch cake pan with baking spray.

In a large bowl, whisk together the cake mix, water, oil, and eggs until well combined. Pour the batter into the prepared pan and bake according to the package directions. Cool the cake completely.

Line a small baking sheet or plate with wax or parchment paper, making sure it fits in your fridge.

Crumble the cooled cake into a large bowl. Add the frosting and stir with a wooden spoon, or beat on low speed with a hand mixer for about 30 seconds, until the mixture is crumbly and resembles wet sand. It should not be pasty.

Scoop the cake mixture and roll into 1-inch balls, about 1 tablespoon each. Place the balls on the lined baking sheet; it's okay if they touch. Refrigerate for at least 4 hours or freeze for 30 minutes.

Once the cake balls have chilled, melt the candy melts or chocolate wafers according to the package instructions and pour into a 2-cup liquid measuring cup or tall drinking glass.

Pull out a few cake balls at a time, leaving the rest in the fridge so they stay cold. If they were frozen, move them to the fridge. Dip the tip of a lollipop stick in the melted coating and insert it about halfway into a cake ball.

Dip the cake ball into the coating, covering the base where the stick meets the cake, and turn to coat. Remove and gently tap the stick on the side of the cup to let the excess drip off.

Decorate with sprinkles if desired, then stand the cake pop upright in a cake pop holder until the coating sets, 30 minutes to 1 hour. Rewarm the coating as needed while you coat the rest.
Creator's notes
Keep the cake balls cold as you work so the candy coating sets quickly. The cake-and-frosting mixture should feel like wet sand, not paste. Any cake and frosting flavor combination works.
