Easy Chocolate Waffles
Deeply cocoa-rich waffles with a crisp shell and a tender, cakey middle. Serve them hot off the iron with berries, butter, and a generous pour of maple syrup.
Ingredients
- 1¾ cupsall-purpose flour · 210g
- ½ cupgranulated sugar · 100g
- 2 teaspoonsbaking powder
- ½ teaspoonbaking soda
- ½ teaspoonsalt
- ½ cupunsweetened cocoa powder · 50g
- 1¾ cupswhole milk · 420ml
- ½ cupunsalted butter · melted and cooled slightly (113g), plus more for brushing the iron
- 2large eggs · room temperature
- 2 teaspoonsvanilla extract

In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Sift in the cocoa powder, then whisk everything together.

In a medium bowl, whisk together the milk, melted butter, eggs, and vanilla.

Pour the milk mixture into the flour mixture and stir until combined; a few lumps are okay. Set the batter aside.

Preheat the waffle iron on high. Once hot, brush it with melted butter or spray with nonstick cooking spray.

Add ¼ to 1 cup of batter to each cavity of the hot iron, adjusting for your waffle maker — a large round iron takes about 1 cup per waffle, smaller square cavities ¼ to ⅓ cup.

Cook for 3 to 4 minutes, until steaming and darker brown in color.

Transfer the waffles to a wire rack until ready to serve. Serve hot with berries, maple syrup, and butter or your favorite toppings.
Creator's notes
Cocoa hides the golden-brown doneness cue, so chocolate waffles often get pulled early and turn soft — cook until the waffle is steaming and visibly darker for a crisp shell.
