Easy Italian Bread

Two loaves of soft, chewy Italian-American bread with a thin golden crust from a steamy oven. Perfect for dipping in seasoned oil, serving alongside pasta and soup, or building a giant sandwich.

Ingredients

  • 2 cupswarm water · about 110°F
  • 1 Tbspactive dry yeast · a little more than one packet
  • 1 Tbspgranulated sugar
  • 5 1/2 cupsall-purpose flour · 660 g total: 3 cups (360 g) to start, 2 1/2 cups (300 g) added gradually, plus a tablespoon or two more as needed
  • 1 1/2 tspsalt
  • 2 Tbspolive oil · 1 Tbsp in the dough, 1 Tbsp for brushing the shaped loaves; plus more for oiling the rising bowl

John notes this is really Italian-American bread — softer with a thinner crust than traditional Italian loaves, which were baked in wood-fired ovens. Humidity and how you measure flour both affect the dough, so the recipe errs on the low side and you add extra flour a tablespoon at a time until the dough is tacky but not sticky.
