Easy No Bake Cookies
Fudgy, chewy chocolate peanut butter cookies that set up on the counter with no oven required. A handful of pantry staples and a few minutes on the stove get you a batch of the classic treat also known as preacher cookies or cowpies.
Ingredients
- 1½ cupsgranulated sugar · 300g
- ½ cupmilk · 120ml
- ½ cupunsalted butter · 113g
- ¼ cupunsweetened cocoa powder · 25g
- 2½ cupsquick oats · 250g
- ¾ cupcreamy no-stir peanut butter · 200g
- 2 teaspoonsvanilla extract

Line two baking sheets with parchment paper or wax paper.

In a medium saucepan, whisk together the sugar, milk, butter, and cocoa powder and place over medium heat. Stir occasionally until the mixture reaches a boil.

Once boiling, stop stirring and let the mixture boil for exactly 60 seconds (set a timer!), then remove from the heat.

Add the oats, peanut butter, and vanilla, and stir with a silicone spatula until well combined.

Use a cookie scoop or spoon to drop heaps of the mixture onto the lined baking sheets, about 2 tablespoons each.

Let the cookies cool until set, 20 to 30 minutes.
