Easy Peach Cobbler
Fresh yellow peaches macerated in brown and granulated sugar bake into a buttery, cinnamon-scented batter that rises golden around the fruit. It's a from-scratch summer dessert that comes together in about an hour.
Ingredients
For the peaches
- 6large yellow peaches · ripe, about 900g
- 1/4 cuppacked light brown sugar · 55g
- 1/4 cupgranulated sugar · 50g
For the cobbler batter
- 7 tablespoonsunsalted butter · 100g
- 1 cupall-purpose flour · 120g
- 3/4 cupgranulated sugar · 150g
- 2 teaspoonsbaking powder
- 1/2 teaspooncinnamon
- 1/4 teaspoonsalt
- 3/4 cupwhole milk · 180mL

Preheat the oven to 375°F. Cut the butter into a few pats and place them in a 9x13 baking dish, then put the dish in the oven until the butter melts, about 5 minutes. Set aside.

Peel the peaches, then halve them, remove the pits, and slice into roughly 1/4-inch-thick pieces. Transfer to a large skillet.

Sprinkle the brown and granulated sugar over the peaches and mix, then set over medium heat, stirring occasionally, for just a few minutes until the sugars dissolve. Remove from the heat and set aside.

Mix the flour, baking powder, salt, sugar, and cinnamon in a large bowl, then pour in the milk and mix until just combined.

Transfer the batter to the baking dish and spread it toward the edges, but do not mix it with the butter.

Spread the peaches and any liquid evenly over the batter, leaving some gaps for the cobbler topping to rise through.

Bake for 40 to 45 minutes, until the cobbler is golden brown and springs back when pressed lightly.
