Easy Philly Cheesesteak
Thinly sliced sirloin gets a hard sear, then folds into sweet caramelized onions and peppers under a blanket of melted provolone. Piled into toasted hoagie rolls, it's South Philly comfort in about 25 minutes.
Ingredients
- 2 tablespoonsvegetable oil · divided
- 1/2sweet onion · thinly sliced (208g)
- 1/2red bell pepper · seeded and thinly sliced (91g)
- 1/2green bell pepper · seeded and thinly sliced (85g)
- 1 1/2 teaspoonsgarlic powder · divided
- 1 teaspoonsalt · divided
- 1/2 teaspoonground black pepper · divided
- 1 poundsirloin steak · thinly sliced (454g)
- 4hoagie rolls · split lengthwise (284g)
- 4 slicesprovolone cheese · 1 ounce each (113g total)

Preheat the oven to 400°F.

In a large skillet, heat 1 tablespoon of the oil over medium-high heat. Add the onion, bell peppers, 1/2 teaspoon each of garlic powder and salt, and 1/4 teaspoon of the black pepper. Cook, stirring occasionally, for about 10 minutes, until the vegetables are browned and caramelized. Remove the skillet from the heat and transfer the vegetables to a plate.

In a medium bowl, season the steak with the remaining 1 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Toss to coat evenly.

Return the skillet to high heat with the remaining 1 tablespoon of oil. Add the steak and spread it into an even layer. Cook undisturbed until browned, about 1 1/2 minutes. Flip the pieces and cook until cooked through, about 1 minute more. Stir the vegetables back in to rewarm, then remove the skillet from the heat.

Meanwhile, open the rolls and place them cut side up on a baking sheet. Bake until lightly toasted, about 8 minutes, then remove from the oven.

Divide the steak and vegetable mixture into 4 piles in the pan. Top each pile with a slice of cheese. Cover and let the cheese melt for 2 to 3 minutes, returning the pan to low heat if needed.

Place one section of meat and melted cheese into each roll and serve immediately.
