Easy Royal Icing
A foolproof three-ingredient royal icing that whips up glossy and pipes beautifully for outlining and flooding cookies. It dries hard with a shiny finish, so decorated sugar cookies and gingerbread houses look bakery-made.
Ingredients
- 3egg whites
- 1 poundconfectioners' sugar · 450g
- 1 teaspoonvanilla extract
Steps

In the bowl of a stand mixer or a large mixing bowl, beat the egg whites on medium-low speed until frothy, about 1 minute.

With the mixer on low speed, slowly add the confectioners' sugar and vanilla.

Once fully incorporated, increase the speed to medium-high and beat until stiff, shiny peaks form.

Divide the icing among small bowls and dye with gel food coloring if desired.

Transfer the icing to piping bags and decorate the cookies.
Creator's notes
Keep any icing that isn't being used immediately covered with plastic wrap — it dries out very quickly.
