Easy Shrimp Scampi
Plump shrimp simmered in a garlicky butter sauce brightened with white wine and fresh lemon. It comes together in about 15 minutes and tastes like it took far longer — spoon it over pasta or mop it up with crusty bread.
Ingredients
- 1/4 cupbutter · divided (57g)
- 2 tablespoonsextra-virgin olive oil
- 5garlic cloves · minced (20g)
- 1 poundlarge shrimp · peeled and deveined (450g)
- 1/4 teaspoonsalt
- 1/4 teaspoonground black pepper
- 1/4 cupdry white wine · 60mL
- 1/4 teaspoonred pepper flakes
- 2 tablespoonsfreshly squeezed lemon juice
- 1/4 cupfresh parsley · chopped
- —Cooked pasta or crusty bread · for serving
Steps

Place a large skillet over medium-high heat and melt 2 tablespoons of the butter with the olive oil.

Add the garlic and cook for 30 seconds.

Add the shrimp, salt, and black pepper. Cook until the shrimp starts to turn pink, about 1 minute.

Flip the shrimp, pour in the wine, and add the red pepper flakes. Bring to a simmer and cook until the liquid reduces by half and the shrimp is cooked through, about 3 minutes. Remove from the heat.

Stir in the remaining 2 tablespoons of butter, the lemon juice, and the parsley.

Serve immediately over hot cooked pasta or with warm crusty bread.
Creator's notes
Watch the shrimp closely — they cook much faster than most people expect and can go from juicy to rubbery in an instant.
