Easy Tiramisu
Ladyfingers soaked in espresso and dark rum layered with a velvety mascarpone cream built on a gently cooked custard. It's a no-bake Italian classic that tastes far more elaborate than the effort it takes.
Ingredients
- 1½ cupsespresso or very strong coffee · room temperature
- ¾ cupdark rum · divided
- 16 ouncesmascarpone · 452g
- 6large egg yolks
- ⅔ cupgranulated sugar · 133g
- 2 cupsheavy whipping cream · 480ml
- 2 teaspoonsvanilla extract
- 40ladyfingers
- ⅓ cupunsweetened cocoa powder · 33g
Steps

Stir together the coffee and 1/2 cup of the dark rum in a medium bowl and set aside.

In a large mixing bowl, combine the mascarpone and the remaining 1/4 cup of dark rum. Whisk together or beat with a hand mixer on medium speed until well combined, then set aside.

Combine the egg yolks and sugar in a medium heat-proof bowl or the top of a double boiler and whisk until well combined. Bring 2 inches of water to a simmer in a small pot, then set the bowl over the simmering water, making sure the water does not touch the bowl.

Whisk the yolk mixture constantly until the sugar has dissolved and the mixture is light yellow and slightly thickened, about 5 to 8 minutes.

Pour the egg yolk mixture into the mascarpone and whisk until combined. Refrigerate for 15 minutes to cool.

In a large mixing bowl or the bowl of a stand mixer fitted with the whisk attachment, combine the cream and vanilla. Beat on medium speed until stiff peaks form, 3 to 5 minutes.

Fold the whipped cream into the mascarpone mixture, running a whisk through it at the end to blend in any remaining streaks.

Working one at a time, briefly dip the top and bottom of each ladyfinger in the coffee mixture, no more than 2 seconds. Arrange enough ladyfingers in a single layer to cover the bottom of a 9x13-inch dish, leaving as few gaps as possible.

Spread half of the mascarpone mixture over the ladyfingers, smoothing it to the edges with an offset spatula. Dip more ladyfingers and arrange them in a single layer on top of the filling.

Spread the remaining mascarpone mixture into an even layer, dust the top with the cocoa powder, and chill overnight so the tiramisu can set.
Creator's notes
You can omit the rum and soak the ladyfingers in extra coffee with a dash of vanilla, or swap in a favorite liqueur like Kahlua, Grand Marnier, or Godiva. The custard (zabaglione) is lightly cooked over simmering water instead of using raw yolks. Don't skip the overnight chill — the tiramisu needs time to set up or it will be a delicious mess.
