Easy Tomato Soup

A rich, velvety tomato soup built on whole canned tomatoes, sautéed onions, and plenty of garlic, finished with heavy cream for a rounded, perfectly balanced flavor. About 10 minutes of active work delivers a pot of warm, cozy comfort any time of year.

Ingredients

  • 3 tablespoonsolive oil
  • 2 tablespoonsbutter
  • 1yellow onion · chopped; it does not need to be finely chopped since the soup gets blended
  • 6 clovesgarlic · minced or passed through a garlic press; use fresh, not jarred
  • 2 28 oz canswhole peeled tomatoes
  • 3 cupswater or stock · pour it into the empty cans first to rinse out the last of the tomato flavor
  • 1 tablespoonsugar · add more to taste to balance the acidity
  • 1/2 teaspooncracked black pepper
  • 1 teaspoonsalt · added in stages, plus more to taste
  • 3/4 cupheavy cream
  • fresh basil, cheese, or other garnish · for serving

Creator's notes

Use an enameled or stainless steel pot — aluminum or copper reacts with the tomatoes' acidity and adds a metallic taste. Use fresh garlic, never jarred. Restaurant tomato soup usually tastes better because it has more sugar, salt, cream, and butter, so season generously to taste. Skip a high-speed blender in favor of an immersion blender, since blending olive oil (especially extra virgin) can turn it bitter. The soup keeps 4 days in the refrigerator or up to 3 months in the freezer.
