Easy Turkey Meatloaf
A tender, juicy turkey meatloaf built on a milk-soaked panko base with sautéed onion and garlic, then brushed with a tangy ketchup-Worcestershire glaze. It comes together fast and bakes up into a weeknight dinner with extra sauce for serving.
Ingredients
- 4 tablespoonsolive oil · divided (60mL)
- 1/2large yellow onion · chopped (about 1 cup, 120g)
- 1 1/2 teaspoonssalt · divided
- 4 clovesgarlic · minced
- 1 cuppanko bread crumbs · 60g
- 1/2 cupwhole milk · 120ml
- 2large eggs · lightly beaten
- 2 tablespoonsWorcestershire sauce · divided
- 1 teaspoonground black pepper
- 2 poundsground turkey · 900g
- 1 1/2 cupsketchup · 360ml

Preheat the oven to 325°F. Lightly spray a rimmed baking sheet with cooking spray.

In a medium skillet, heat 2 tablespoons of the olive oil over medium heat. Add the onion and 1/2 teaspoon of the salt. Cook, stirring occasionally, until the onions are very tender and lightly browned around the edges, 6 to 8 minutes. Stir in the garlic and cook 2 minutes more. Remove from the heat and transfer to a plate to cool to room temperature.

In a large bowl, stir together the panko and milk. Let stand 5 minutes so the panko absorbs the milk for a juicy meatloaf.

Stir the eggs, the remaining 2 tablespoons olive oil, 1 tablespoon of the Worcestershire sauce, the pepper, and 1 teaspoon salt into the panko mixture. Add the cooled onion mixture and the turkey. Using your hands, gently mix until just combined, being careful not to squeeze the turkey.

Turn the mixture out onto the prepared baking sheet and shape it into a 9x4-inch loaf.

In a small bowl, whisk together the ketchup and the remaining 1 tablespoon Worcestershire sauce. Reserve 1 cup, cover, and set aside.

Brush the meatloaf with half of the remaining ketchup mixture and place it in the oven.

Bake for 30 minutes. Brush again with the remaining ketchup mixture and return to the oven for 30 to 40 minutes, until a meat thermometer inserted into the center registers 165°F.

Remove from the oven and let the meatloaf rest for 15 minutes. Serve warm with the reserved ketchup mixture.
